Seri Muka Keladi | Yam | Ube

I put a twist on traditional kuih Seri Muka which usually pair with pandan curd on top. In my recipe I changed it to Keladi or in English its a Yam, some people called it as Ube, a purple yam.

Keladi/Yam/Ube has always become my favourite asian dessert flavour. I have created so many dessert with this ingredient. It taste creamy and very tropical. In additional, Ube is very popular now in western and european. More foodies are falling in love with Yam/Ube. The glutinous rice with coconut cream is a perfect match, hence I make them to my own version of kuih Seri Muka.

Seri Muka literally mean Glowing Face. So please try this dessert for a naturally glowing face 😛

Seri Muka Keladi | Coconut Glutinous Rice with YAM/UBE

Ingredients

  • 1 cup glutinous rice | 1 cawan beras pulut
  • 1 cup coconut milk | 1 cawan santan pekat
  • 1/2 teaspoon salt | 1/2 sudu kecil garam
  • 1 pandan leaf | 1 helai daun pandan
  • 1/2 cup all purpose flour | 1/2 cawan tepung gandum
  • 1/2 tablespoon corn flour | 1/2 tablespoon tepung jagung
  • 1/3 cup sugar | 1/3 cawan gula
  • 1 medium egg | 1 telur saiz sederhana
  • 2 pinch salt | 2 cubit garam
  • 1/2 cup water | 1/2 cawan air
  • 3/4 cup coconut milk | 3/4 cawan santan pekat
  • 1 teaspoon yam/ube flavouring | 1 teaspoon perisa keladi

Instructions

  1. Soak glutinous rice with water and pandan leaf overnight. | Rendam beras pulut dan pandan dengan air semalaman.
  2. Strain the water and pandan leaf. | Buang air dan daun pandan.
  3. Transfer it to cake tin 16cmX16cm. Put parchment paper on bottom and brush some oil the side. | Tuang ke dalam loyang saiz 16cmX16cm. Letak kertas minyak di dasar dan sapu minyak di sekeliling loyang.
  4. Steam it on high heat for 20 minutes. | Kukus pada suhu tinggi selama 20 minit.
  5. Mix well the rest of the ingredients in a bowl. | Campur sebati bahan bahan selebihnya ke dalam mangkuk.
  6. Once the glutinous rice cook, flatten it softly. | Apabila nasi pulut masak, ratakan dengan lembut.
  7. Strain over the mixture on the glutinous rice. | Tapis semua campuran bahan ke atas nasi pulut.
  8. Cover the lid with a cloth and steam for another 30 minutes on low heat. | Balut penutup dengan kain dan kukus selama 30 minit pada suhu rendah
  9. Let it completely cool before cut. | Biarkan ia sejuk sepenuhnya sebelum potong
  10. *cut with plastic knife to get a clean cut. | * potong dengan pisau plastik untuk potongan yg cantik

    kind i have a main dish recipes that be competed in food tasting in the Philippines. I would like to apply for a commi chef and my executive chef will be a filipino. Can you recommend something special menu from appetizer, main dish to dessert.
