Hello everyone, it has been a month since my last post. I feel so happy finally able to upload new recipe! So much thing happen starting 2018. How is your year begin?
I have recorded this recipe since last year! But just got the time to edit and upload it in youtube! Anyway lets talk more about the recipe! This is a very classic recipe, Creme Caramel with my own twist!
Instead of vanilla Im using fresh pandan juice and also substitute creme/milk with coconut cream/milk. It taste so rich and aromatic at the same time! whoever love pandan will definitely fall in love with this recipe! If you get addicted to it, not my fault 😛
TIPS ON HOW TO MAKE THIS SUCCESSFULLY
- Make sure you dont boil the coconut cream/milk it has tendency to separated
- Use fresh leaf instead flavouring (3 leaf blend with 30g water, and sieve it)
- Close it with aluminium foil while cooking, this help it to evenly cook.
- Boil water in the steamer than change it to low heat.
- Let it cool inside chiller before serve.
VIDEO STEP BY STEP
- 1 medium egg | 1 telur sederhana
- 120g coocnut milk/cream | 120g santan
- 30g pandan juice ( 30g water + 3 pandan leaf) | 30g jus pandan ( 30g air+ 3 daun pandan)
- 1 tablespoon sugar | 1 sudu besar gula
- 1/4 teaspoon salt | 1/4 sudu teh garam
- 2 tablespoon sugar | 2 sudu besar gula
- 1 tablespoon water | 1 sudu besar air
- Caramel sugar and water until golden brown. | Karamelkan gula dan air hingga keperangan gelap.
- Pour into bowl and let it set. | Tuangkan kedalam mangkuk dan biarkan ia keras.
- Blend water and pandan, sieve the juice. | Kisarkan air dan daun pandan, tapiskan jusnya.
- Heat the coconut milk/cream, pandan juice, sugar and salt just about to boil. | Panaskan santan, jus pandan, gula dan garam. Jangan didihkan.
- Whisk the egg and slowly pour in the coconut milk mixture. Stir homogeneously. | Pukul telur dan tuangkan perlahan campuran santan. Campur sebati.
- Pour into the caramel bowl and cover with aluminium foil. | Tuangkan ke dalam mangkuk karamel dan tutup dengan aluminium foil.
- Boil water in steamer and turn the heat to low. Steam for 18-20 minutes | Didihkan air di dalam pengukus, tukar api kepada kecil dan kukus selama 18-20 minit.
- Let it cool in chiller before serve. | Biarkan ia sejuk di dalam peti sejuk sebelum hidang.
