Pandan Coconut Bun | Roti Kelapa Pandan

 

This is all time favorite bun in Malaysia.

Soft buttery bun with aromatic pandan coconut filling! yummy!

Remind me of my childhood, my mom always bought this bun from a local bakery shop. The only bakery shop during that time in our neighborhood.

Living in Netherlands its hard to get fresh desiccated coconut. If you can find fresh desiccated coconut its better, more aromatic and creamy! Hope you will bake this bun and enjoy it with dear family:)

Pandan Coconut Bun | Roti Kelapa Pandan

Ingredients

  • 3 cups of flour | 3 cawan tepung
  • 3 tablespoons of milk powder | 3 sudu besar susu tepung
  • 1/2 teaspoon salt | 1/2 sudu kecil garam
  • 1 egg | 1 telur
  • 1 cup of water | 1 cawan air
  • 1/2 tablespoons yeast | 1/2 sudu besar yeast
  • 3 tablespoons sugar | 3 sudu besar gula
  • 2 tablespoons butter | 2 sudu besar mentega
  • *add 1-2 tablespoon flour if the dough is too wet before adding butter (its depend on flour brand)
  • * tambah 1-2 sudu besar tepung jika adunan terlalu basah sebelum tambah mentega (bergantung pada jenama tepung)
  • -
  • 1/3 cup water | 1/3 cawan air
  • 1/2 cup palm sugar | 1/2 cawan gula melaka
  • 1 1/2 cawan desiccated coconut | 1 1/2 cawan kelapa parut
  • salt to taste | garam ikut rasa
  • 1 teaspoon butter | 1 sudu kecil mentega
  • * if you like sweet, add more sugar
  • * jika suka manis, tambah lagi gula

Instructions

  1. Mix water and palm sugar, stir until dissolve. | Campur air dan gula melaka, kacau hingga sebati
  2. Put in pandan leaf and let it boiled.Once boiled put in butter.| Letak daun pandan dan biarkan ia mendidih. Kemudian letak butter.
  3. Put in desiccated coconut & mix well. Let it cool. | Masukkan kelapa parut, kacau sebati. Biarkan sejuk
  4. Mix yeast,sugar, and water and let it bubble | Campur yeast, air dan gula biarkan ia membuih.
  5. In mixing bowl, mix in flour, milk powder and salt | Campur tepung, tepung susu, dan garam dan mangkuk adunan.
  6. Pour in yeast mixture & egg. Start kneading for 5 minutes until well combined| Tuang campuran yeast dan telur ke dalam mangkuk adunan. Mulakan mesin adunan selama 5 minit, hingga semua sebati.
  7. Put in butter and knead for another 10 minutes until the dough is elastic, windowpane test.| Masukkan mentega dan teruskan proses uli lagi 10 minit hingga mendapat adunan yg elastik.
  8. Cover the dough and let it double the size | Tutup adunan dan biarkan ia membesar 2 kali ganda.
  9. Degas the gas and divide it to 18 balls (40g)| Uli dan buangkan angin. Bahagikan adunan kepada 18 biji (40g) .
  10. Flatten the dough and roll it. Roll it to ball shape | Leperkan adunan dan gulungkan ia dan bentukkan bulat.
  11. Pinch the side to flatten it and spoon 1 tablespoon of coconut filling. Close the side to form a ball.| Picit bahagian tepi untuk leperkan adunan dan letak 1 sudu besar inti kelapa. Tutupkan adunan dan bentukkan ia bulat.
  12. Arrange in cake tin, cover and let it double the size.| Susun di dalam loyang dan biarkan ia besar 2 kali ganda.
  13. Egg wash & bake at 160-170C for 25 minutes | Sapu telur dan bakar pada suhu 160-170C selama 25 minit.
  14. Brush some butter and let it rest for few minutesl | Sapu sedikit mentega dan biarkan ia rehat seketika.
